As one of four brothers, you couldn’t be behind the door when dinner was served in our house!
I always wanted a culinary career and on leaving school I studied Professional Cookery at Bury College, together with Art and Design – a good combination for the skills required for any future chef, but in hindsight, particularly useful in creating beautiful Patisserie work.
From Pot Washer to Top Chef
During these years, I gained practical experience (and spending money!) by working in my local gastro pub. It wasn’t easy, as any chef would tell you, but starting work as a Kitchen Porter and working up through the positions of Waiter, Assistant Manager and Chef, gave me an excellent grounding on all aspects of the hospitality industry. Wanting to refine my skills, increase my overall knowledge of the profession and give myself the best chance possible of gaining future experience in the finest of restaurants, in July 2012 I enrolled on the Professional Culinary Diploma, at the Ashburton Chef’s Academy.
Passion for Patisserie
It was during this time that I discovered a true passion for patisserie work. I spent time learning how to butcher meat and fillet fish but it was when I ventured into the pastry kitchen that it just “clicked” and I found expressing my creativity through dessert menus exciting. On completion of the course I secured a position at Top Chef Michael Caines’ 4 star ‘Abode Manchester’, gaining excellent experience of working in the pastry section of a fine dining restaurant.
Having discovered a passion for patisserie my next move to ‘We Love Cups’ Ltd was a bit of a “no brainer,” spending a year as a baker immersed in everything related to the art of patisserie work. However, London was calling, (it’s part of a chef’s initiation!) and in 2014, I was lucky to secure a position at the Dorchester Hotel working firstly in the pastry kitchen and latterly in the afternoon tea section. As you can imagine, the experience gained and the attention to detail is of the highest standard, and I was honoured to play a part in HM The Queen’s 90th Birthday Party
In 2017 I moved back to Manchester to continue my career to work as Head of Pastry with the highly successful San Carlo Group in Manchester where I honed my skills and met a host of amazing celebrity diners! My ultimate goal, though, has always been to move back “up North” to start my own patisserie and to create a family run neighbourhood restaurant specialising in fine food and exquisite cakes and pastries. I always wanted to create the dishes of my choice and showcase my love of patisserie. Situated in the very heart of Ramsbottom, a thriving area of shops and cafes, I hope that Bartisserie 2 is rapidly becoming the place to go for fine dining, cocktails, a leisurely lunch or one of my bespoke Afternoon Teas.
I also love working with my local community and going back to work with my old School and the local children was such a lovely afternoon and hopefully inspired an interest in cooking and nutrition.
My team at Bartisserie2 all have fantastic skills in cookery, patisserie and of course, customer care. We work hard and play hard! My family have always been my greatest supporters and I love it when new friends and old come together at Bartisserie 2 -
